Default Bacon wrapped game bird Kabobs

This is one of our favorite end of dove season recipes (or until you get enough birds down through the season to make a meal). Pairs well the cold beverage of your choosing.

Dove breasts sliced.
Onion sliced (red works best for this recipe, but use what you like).
Bell pepper sliced.
Trappey's sweet and hot jalapenos.
Bacon (your choice).

Wrap dove breasts in bacon, alternating onion, bell pepper and Trappey's sweet and hot jalapenos on stainless or water soaked skewers. Spray grill with non-stick cooking spray before laying these down. Dove tend to stick. Grill to perfection and enjoy.

Also works well with pheasant or chukar vs. dove. Probably would work well with teal too. I guess you could try chicken as a substitute.

Looks good, but I will have to substitute something else for the dove. I cannot kill that many in a season.

That photo is a couple of years old, we saved all our birds from that whole season and had a big cookout with a few backstraps from some unsuspecting piggies too. Celebrated the season, the birds, the old dogs and new pup and of course the friends & family.
