pinto beans
 
1# pinto beans
2 ham hocks or link of your favorite sausage
1 can of rotel (mild medium or hot, your choice)
1 can of chicken broth
1 onion chopped
1 bell pepper chopped
3 table spoons of williams pinto bean seasoning
dump everything into a crock pot, add water til ingregients are covered by about 1" of water.
cook on high for 8 hours or low for 10-12 hours.

easiest way I know to make a good pot of beans. When I'm at the lease, I usually get a pot of beans ready right after i put the coffee pot on the stove. They are ready went you get in from the evening hunt. I throw a pan of corn bread in the oven when I get back to camp. By the time I get done skinnin my deer, dinner is ready!

Try adding 3-5 table spoons of "File" seasoning about half way through cooking process. This will add great twist to any bean recipe and thicken the sauce a bit.
Never tried it with Rotel, but I will...
Not sure if you do but I dont presoak beans so the first thing they soak up is the flavor.
